Abstract

Purpose

The purpose of this paper is the physico-chemical, microbiological, colorimetric, sensorial characterization of choris, a traditional smoked pork sausage produced in the state of Goa (India), including its storage stability (0–180 days) at room temperature, aiming at the geographical indication certification and entrepreneurship prospects.

Design/methodology/approach

A total of 48 samples of “choris” were collected from 24 villages of Goa and were analyzed at different intervals (0–180 days) for physico-chemical, proximate, microbiological, colorimetric and sensory attributes during the storage at room temperature.

Findings

The mean pH of 4.45 and water activity (aw) of 0.78 were recorded. The pH, tyrosine value, fat percentage and free fatty acid content registered a significant increase, whereas moisture content, aw and moisture–protein ratio reduced as storage progresses. The colorimetric values lightness (L*), hue angle (H*) and redness index values reduced significantly during storage. The mean total viable count, yeast and mold, and lactic acid bacteria count were found to proliferate significantly as storage advanced. Nevertheless, the hedonic scores not reaching an unacceptable level (= 4) at the end of the storage period.

Originality/value

In accordance with the various parameters adopted during the study, choris could be characterized as “naturally fermented dry smoked” sausages, which were shelf-stable at room temperature for 180 days. The product characterization of choris is essential to guarantee the genuineness, safety and consumer's acceptability. This study will also rebound in an augmented uniformity of the product, which will favor the geographical indication certification and the entrepreneurship prospects of this traditional product.

Abstract

Purpose

Using survey data of a developing country city, this study aims to examine the impact of different socio-demographic factors on the choice of less-polluting modes of transport for purposes other than work.

Design/methodology/approach

Stratified random sampling technique is employed and data on socio-demographic characteristics and mode of transport used is collected. Descriptive statistics complemented with a logit model of choice probabilities is implemented on the data obtained.

Findings

Majority of the population in the city uses motorized means of transportation irrespective of the socio-demographic changes existing among them. Women, the individuals belonging to the youngest age group, the least economically well-off group of people, the least educated and the non-working are the individuals more likely to use more of less-polluting modes and less of more-polluting modes for non-work purposes as compared to their counterparts.

Research limitations/implications

The study also calls for the development of an efficient and secured system of public transportation and non-motorized transportation in the city in such a way so as to neither hamper the goal of sustainability nor the goal of empowerment.

Originality/value

To the best of the authors’ knowledge, this is the first time a comprehensive analysis of the influence of socio-demographic factors on choice of type of mode of transport is carried out in this region of the developing world. This analysis will facilitate the policy makers in catering to the transportation needs of different segments of the society.

Abstract

Purpose

Using primary survey data from an urban area in Global North, this study aims to examine the impact of sociodemographic factors on perception of usefulness of public transport and the importance of safety in preferring private modes of transport over public.

Design/methodology/approach

The study uses stratified random sampling technique to collect data on travel behavior and socioeconomic characteristics. Descriptive statistics complemented with bivariate probit model and seemingly unrelated bivariate probit model is implemented on the data obtained.

Findings

The study finds that women, unmarried individuals, the youngest age group, least educated individuals and those who are working are expected to finding public transport more useful as compared to their respective counterparts. Despite finding the mode most useful, women are more likely to find it unsafe to travel.

Research limitations/implications

The study calls attention to not only dealing with the infrastructural changes in system but also with those attached insecurities which limit its use.

Originality/value

To the best of our knowledge, this is the first time a comprehensive evaluation of the demands and challenges for transportation services faced by different segments of the society is carried out in this section of the developing world.

Abstract

Purpose

The aim of this research is to examine the key determinants influencing the success of new service development projects (NSDPs) across four service typologies context.

Design/methodology/approach

The researchers used the scenario-based survey method in an NSDP setting. Structural equation modelling (SEM) was used to test the proposed hypotheses based on survey data from 570 managers under four service typologies.

Findings

Service firms' cross-functional integration (CFI) and internal project team efficiency (IPTE) positively influenced NSDPs. The results also indicated that both technology infrastructure (TI) and IPTE mediated the relationship between CFI and NSDPs. In addition, the mediation effect of TI existed between the relationship of IPTE and NSDPs. Furthermore, the proposed model confirms that, for NSDPs, the role of knowledge-sharing behaviour (KSB), authentic leadership (AL) and firm's culture (FC) across the four service typologies moderated the relationship.

Practical implications

With a better understanding of the dynamics of the aforementioned variables, service managers and the project team can more effectively develop and execute strategies for an NSDP. The article enables practitioners to expand their current understanding of NSDPs by providing insights of the unique antecedents that are significant for new service development across four service types.

Originality/value

This research is the first of its kind to examine the mediating role of KSB and TI in determining NSDPs. This study provides one of the first empirical examinations on NSDPs in the context of four service typologies from the perspective of a developing country, where the service industry is competitive. The study demonstrates that the critical success factors of NSDPs do not differ across service types, thereby confirming the “One Basket Fits all” assumption in the current NSDP research study.

Abstract

Purpose

Using social networks to identify users with traits similar to those of the target user has proven highly effective in the development of personalized recommendation systems. Existing methods treat all dimensions of user data as a whole, despite the fact that most of the information related to different dimensions is discrete. This has prompted researchers to adopt the skyline query for such search functions. Unfortunately, researchers have run into problems of instability in the number of users identified using this approach.

Design/methodology/approach

We thus propose the m-representative skyline queries to provide control over the number of similar users that are returned. We also developed an R-tree-based algorithm to implement the m-representative skyline queries.

Findings

By using the R-tree based algorithm, the processing speed of the m-representative skyline queries can now be accelerated. Experiment results demonstrate the efficacy of the proposed approach.

Originality/value

Note that with this new way of finding similar users in the social network, the performance of the personalized recommendation systems is expected to be enhanced.

Abstract

A growing body of research finds that gig economy platforms use gamification to enhance managerial control. Focusing on technologically mediated forms of gamification, this literature reveals how platforms mobilize gig workers’ work effort by making the labour process resemble a game. This chapter contends that this tech-centric scholarship fails to fully capture the historical continuities between contemporary and much older occurrences of game-playing at work. Informed by interviews and participatory observations at two food delivery platforms in Amsterdam, I document how these platforms’ piece wage system gives rise to a workplace dynamic in which severely underpaid delivery couriers continuously employ game strategies to maximize their gig income. Reminiscent of observations from the early shop floor ethnographies of the manufacturing industry, I show that the game of gig income maximization operates as an indirect modality of control by (re)aligning the interests of couriers with the interests of capital and by individualizing and depoliticizing couriers’ overall low wage level. I argue that the new, algorithmic technologies expand and intensify the much older forms of gamified control by infusing the organizational activities of shift and task allocation with the logic of the piece wage game and by increasing the possibilities for interaction, direct feedback and immersion. My study contributes to the literature on gamification in the gig economy by interweaving it with the classic observations derived from the manufacturing industry and by developing a conceptualization of gamification in which both capital and labour exercise agency.

Abstract

Purpose

Surface roughness has been proved to be influencing the running-in wear of machined components under dry and lubricated sliding conditions. Zinc dialkyl dithiophosphate (ZDDP) is widely used as an anti-wear additive, which reduces the wear by the formation of a tribofilm on the surface (Spikes, 2004). Factors such as temperature, sliding distance, etc. influence the formation of the film. A significant reduction in the power loss due to friction and wear is possible if a synergy is attained between surface roughness effects and the effectiveness of the tribofilm. The present work aims to study the influence of surface roughness and ZDDP addition on the formation and removal of the tribofilm under high contact pressures.

Design/methodology/approach

Samples were prepared by machining. Surface roughness was varied by varying the milling parameters. A reciprocating friction and wear test machine with a ball-on-flat geometry was used for the study. Tests were performed with mineral base oil and base oil added with 1 per cent by weight ZDDP under different operating parameters. Atomic force microscopy (AFM) and scanning electron microscopy (SEM) with energy dispersive X-Ray spectroscopy (EDS) analysis were conducted to study the surface morphology of the tribofilm.

Findings

A quasi-steady-state analysis conducted showed that the wear rate was much lower when tested with base oil containing ZDDP after about 65 min. AFM analysis confirmed the presence of chemically reacted films on the surface. SEM analysis revealed agglomeration of crystal like glassy phosphates. However, high contact pressures at the interface caused the removal of the films resulting in variations in the coefficient of friction. A comparison of the wear rates among the samples of different roughness values tested at 100°C showed that the anti-wear performance of ZDDP was not effective due to high contact pressures.

Originality/value

The findings in this study regarding the tribofilm formation with ZDDP additive and its failure due to high contact pressures will be beneficial for further investigation on wear resistant boundary films developed under such extreme conditions.

Introduction Amines have been known for a number of years as effective corrosion inhibitors. Their efficiency is attributed to the presence of the nitrogen atom acting as the active centre for the adsorption of organic molecules on the metal surface. Several aliphatic and aromatic amines have been reported to serve as effective corrosion inhibitors for iron and steel in acidic solutions. The nitrogen‐containing corrosion inhibitor exhibited a very good performance in hydrochloric acid, but very little effect in sulphuric acid. Hence a study of the mechanism by which the corrosion rate is reduced when these organic compounds are added to solutions is of interest. In this study the inhibition of corrosion of mild steel in HCl and H2SO4 has been studied using different electrochemical techniques. Results are reported and discussed.

Purpose

The purpose of this paper is to study the alignment measurement in collaborative networks, using the fit concept and predictive performance measurement as its main enablers. A performance prediction approach is used in order to control a collaborative business network based not only in present and past performance measurements of each partner, but also taking into account the future behaviour of the intra‐ and inter‐organisational processes performance.

Design/methodology/approach

An exploratory case study was applied to a Brazilian collaborative network and mathematical approaches normally used in control theory were adopted to support alignment measurement.

Findings

The use of predictive measurements to manage the alignment between the results of inter‐organisational processes and performance targets set by the collaborative network.

Research limitations/implications

This approach was applied in a specific supply chain network, based on three industrial companies. For other network typologies it will be necessary to evaluate the alignment that can be achieved.

Practical implications

This predictive approach makes it possible to manage performance pro‐actively using feedforward and feedback control. Therefore, tools that consider performance estimation are used based on a data fusion approach, with a proper combination of leading and lagging measurements, which make it possible to use forecasting methods and tools to achieve good predictions.

Originality/value

The paper introduces an approach to alignment measurement leveraged by the new paradigm of performance prediction and presents an alignment metric for collaborative networks.

Abstract

Purpose

Titanium (Ti) alloys are in high demand in manufacturing industries all over the world. The property like high strength to weight ratio makes Ti alloys highly recommended for aerospace industries. Ti alloys possess good weldability, and therefore, they were extensively investigated with regard to strength and metallurgical properties of welded joint. This study aims to deal with the analysis of strength and microstructural changes in Ti-6Al-4V (Grade 5) alloy after tungsten inert gas (TIG) welding.

Design/methodology/approach

Two pair of Ti alloy plates were welded in two different voltages, i.e. 24 and 28 V, with keeping the current constant, i.e. 80 A It was a random selection of current and voltage values to check the performance of welded material. Both the welded plates were undergone through some mechanical property analysis like impact test, tensile test and hardness test. In addition, the microstructure of the welded joints was also analyzed.

Findings

It was found that hardness and tensile properties gets improved with an increment in voltage, but this effect was reverse for impact toughness. A good corroboration between microstructure and mechanical properties, such as tensile strength, hardness and toughness, was reported in this work. Heat distribution in both the welded plates was simulated through ANSYS software to check the temperature contour in the plates.
